With the silliness and decadence of Fat Tuesday put away for another year, it is time to begin our focus on Lent.Our traditional meal on Ash Wednesday is lentil soup.I start this tomato-based lentil soup in the morning in the slow cooker.We try to fast the entire day with this soup being our only meal at about 5:00.Nothing tastes as good as that lentil soup after going a whole day without food! This is very similar to what we will eat on Good Friday.During this meal, we often discuss ways that our family will observe Lent together as well as encouraging our children to share some of their own personal goals for Lent.

- 3 medium carrots, chopped (or 4 small or 2 large)
- 2 celery stalks, chopped
- 1 large yellow onion, chopped
- 3 cloves garlic, chopped
- 1 large clove shallot, chopped
- 2 cups dry lentils any color(rinsed)
- 8 cups Vegetable stock or Chicken or combo
- Any other leftover vegetables you have on hand.
- 1 14-ounce can diced tomatoes
- 1 bay leaf
- 1 teaspoon dried thyme
- 1½ teaspoons red wine vinegar
- 2 teaspoons Kosher salt
- 1 teaspoon fresh ground black pepper
- 1 teaspoon ground cumin
